Barley has played a part in Icelandic culinary history ever since Iceland\u2019s settlement in the 9th\u00a0century.\u00a0 For a few centuries it was forgotten but it has recently started to make its way into Icelandic contemporary cuisine.\u00a0<em>M\u00f3\u00f0ir J\u00f6r\u00f0<\/em>\u00a0&#8211; Vallanes \u00a0is known for its pioneering role in Iceland in re-introducing barley for human consumption when Eymundur Magn\u00fasson started organic farming in 1985. Together with his wife, Eygl\u00f3 Bj\u00f6rk \u00d3lafsd\u00f3ttir, they focus on further developing the farming of grains and vegetables in Iceland, and on producing products made from localingredients, most of which are\u00a0produced on the farm.<\/p>\n<p>[\/et_pb_text][et_pb_image src=&#8221;https:\/\/visitegilsstadir.is\/wp-content\/uploads\/2020\/05\/mordir-jord2.jpg&#8221; _builder_version=&#8221;4.4.0&#8243;][\/et_pb_image][et_pb_text _builder_version=&#8221;4.4.0&#8243;]<\/p>\n<h2>Where we are\u00a0<\/h2>\n<p><em>M\u00f3\u00f0ir J\u00f6r\u00f0<\/em>\u00a0\u00a0is situated on a farm called Vallanes\u00a0in beautiful East Iceland, near a glacial lake, midway between Egilssta\u00f0ir and Hallormssta\u00f0ur.\u00a0This area is known for its forests and relatively mild climate.\u00a0The fields around Vallanes have been shaped by the planting of over 1,000,000 trees, some of which make shelterbelts that protect the growing crops.<\/p>\n<p>[\/et_pb_text][et_pb_image src=&#8221;https:\/\/visitegilsstadir.is\/wp-content\/uploads\/2020\/05\/mordir-jord3.jpg&#8221; _builder_version=&#8221;4.4.0&#8243;][\/et_pb_image][et_pb_image src=&#8221;https:\/\/visitegilsstadir.is\/wp-content\/uploads\/2020\/04\/farm_modir_jord11.jpeg&#8221; _builder_version=&#8221;4.4.0&#8243;][\/et_pb_image][et_pb_text _builder_version=&#8221;4.4.0&#8243;]<\/p>\n<h2>What we produce<\/h2>\n<p>Everything grown and\/or produced in Vallanes is certified organic by the certification office TUN in Iceland. The product categories are the following: <br \/>\u25aa Barley \u2013 the barley is sold as whole grain (Bankabygg) in 1kg or 20kg, or as flour (Byggmj\u00f6l) in 1kg or 15kg. It is the main ingredient in M\u00f3\u00f0ir J\u00f6r\u00f0\u2019s vegetarian burgers. It is great to use instead of rice or oats in porridge, salads and soups. It can be used, for example, in a dish called Barley Otto, as a side dish in fish or meat dishes, or soaked or boiled as a whole grain for use in bread.<br \/>\u25aa Fresh, pre-packed vegetables (potatoes, parsley, beetroots, kale, turnips, carrots, lettuce, etc.).<br \/>\u25aa Vegetarian burgers \u2013 three varieties in frozen packs of 4 pcs each, or catering packs of 16 pcs and 42 pcs. All of the ingredients in these burgers are cooked and then frozen, requiring only minimal prep prior to eating. <br \/>Most of the ingredients of the burgers are produced by M\u00f3\u00f0ir J\u00f6r\u00f0: the barley, kohlrabi, turnips, potatoes, parsley, beetroots and leeks.
